Vermont's Holy Icon | |

It's said that in the 19th century Vermont had more cows than people. The black-and-white Holstein milch cow has become a jocular state icon, its image plastered everywhere. There are even "cow shops" specializing in Holstein memorabilia. Holy cow! To the right, a Vermont anomaly: water buffalo at a dairy in South Woodstock VT. Their ultra-creamy milk was used to make extra-thick yoghurt, and authentic buffalo mozzarella cheese. Unfortunately, the dairy is no longer producing buffalo milk products. |
